 Tropical Citrus Shrimp Tacos with Mango Salsa

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 2 tsp Badia Mango Pepper
  • 2 tsp Badia Lime Pepper
  • 1 tsp Badia Lemon Pepper
  • 2 tbsp olive oil
  • Zest and juice of 1 lime
  • 1 lime ripe mango, peeled, pitted, and diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeds removed and finely chopped
  • Zest and juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • Salt, to taste

Instructions:

  1. Marinate the Shrimp: In a bowl, combine the Badia Mango Pepper, Badia Lime Pepper, Badia Lemon Pepper, olive oil, lime zest, and lime juice. Add the shrimp and toss to coat. Let marinate for 15-30 minutes.
  2. Prepare the Mango Salsa: In a separate bowl, combine the diced mango, red onion, jalapeño, lime zest, lime juice, and cilantro. Season with salt to taste. Mix well and set aside.
  3. Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for 2-3 minutes on each side or until they turn pink and are cooked through. Remove from heat.
  4. Assemble the Tacos: Warm the corn tortillas on a skillet or directly over a gas flame until they're soft and pliable. Place a few slices of purple cabbage on each tortilla, followed by 3-4 shrimp. Top with a generous spoonful of mango salsa. Drizzle with sour cream or Greek yogurt if desired. Garnish with fresh cilantro leaves.

 Citrus-Glazed Grilled Chicken Skewers 

Ingredients:

  • 1.5 lbs boneless, skinless chicken breasts, cut into chunks
  • 2 tablespoons olive oil
  • 2 teaspoons Harlem Garlic Pepper
  • 2 teaspoons Lime Pepper
  • 2 teaspoons Lemon Pepper
  • 2 teaspoons Orange Pepper
  • 2 tablespoons honey
  • Juice of 1 lime
  • Juice of 1 lemon
  • Juice of 1 orange
  • Wooden skewers, soaked in water for 30 minutes

 

Instructions:

  1. Preheat your grill to medium-high heat.
  2. In a bowl, combine the olive oil, Harlem Garlic Pepper, Lime Pepper, Lemon Pepper, and Orange Pepper. Mix well to create a spice rub.
  3. Thread the chicken chunks onto the soaked wooden skewers. Generously coat the chicken skewers with the spice rub, making sure to cover all sides.
  4. In a small bowl, whisk together the honey, lime juice, lemon juice, and orange juice to create the citrus glaze.
  5. Place the seasoned chicken skewers on the preheated grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and nicely charred.
  6. During the last 3 minutes of grilling, brush the chicken skewers with the citrus glaze, allowing it to caramelize and create a deliciously sticky coating.
  7. Remove the chicken skewers from the grill and let them rest for a few minutes.
  8. Serve the citrus-glazed grilled chicken skewers hot, garnished with fresh herbs like cilantro or parsley. They pair perfectly with a side of grilled vegetables, a crisp salad, or even steamed rice.

  • Make a strong cup of Cuban coffee using a moka pot or espresso machine.
  • In a separate small pot, heat an equal amount of milk (preferably whole milk) until hot but not boiling.
  • Pour the hot coffee into a cup, filling it about halfway.
  • Slowly pour the hot milk into the cup, adding it on top of the coffee.
  • Stir gently to combine the coffee and milk.

Ingredients:

  • 2 racks of baby back ribs (about 4-5 lbs)
  • 2 tbsp of Badia Brisket Rub
  • 2 tbsp of Traditional BBQ Seasoning
  • 2 tbsp of Rib Rub Seasoning
  • 1 cup of apple cider vinegar
  • 1/4 cup of brown sugar
  • 1/4 cup of honey or maple syrup
  • 2 cloves of garlic, minced
  • 1 tbsp of olive oil or melted butter
  • Optional: Your favorite BBQ sauce for glazing

Instructions:

  1. Preparation: Remove the membrane from the back of the ribs. This will allow the seasonings to penetrate deeper into the meat and make the ribs more tender.
  2. Seasoning the Ribs: In a bowl, mix together the Badia Brisket Rub, Traditional BBQ Seasoning, and Rib Rub Seasoning. Rub this mixture generously over both sides of the ribs, ensuring every inch is covered. Let the ribs marinate for at least 2 hours, preferably overnight in the refrigerator.
  3. Preparing the Mop Sauce: In a bowl, whisk together apple cider vinegar, brown sugar, honey (or maple syrup), minced garlic, and olive oil (or melted butter). This will be used to baste the ribs while they're cooking.
  4. Grilling the Ribs: Preheat your grill to a medium-low heat. If using a charcoal grill, set it up for indirect grilling. Place the ribs bone-side down on the grill, away from direct heat. Cover the grill and cook for about 2.5 to 3 hours, basting with the mop sauce every 30 minutes. Ensure the ribs are cooked at a consistent and low temperature to achieve that fall-off-the-bone tenderness.
  5. Glazing (Optional): In the last 20 minutes of grilling, brush your favorite BBQ sauce over the ribs for an added layer of flavor and a glossy finish.
